Baklava

Cardamom Sugar

Method

Baklava

1

Prepare the Baklava

Preheat the oven to 350°F (175°C). Butter a 9x13 inch baking dish. Layer 10 sheets of phyllo dough, brushing each sheet with melted butter. Combine walnuts, sugar, and cinnamon, and sprinkle over the dough. Continue layering phyllo and walnut mixture until all ingredients are used, finishing with 10 layers of phyllo on top. Cut into squares and bake for 45-50 minutes until golden.

2

Make the Syrup

In a saucepan, combine water, sugar, and honey. Bring to a boil and simmer for about 10 minutes. Pour the syrup over the baklava once it has cooled slightly. Let it absorb the syrup before serving.

Turkish Coffee Ice Cream

3

Make the Ice Cream Base

In a medium saucepan, combine heavy cream, whole milk, sugar, coffee, vanilla, and salt. Heat over medium heat until the sugar is dissolved and the mixture is warm. Do not boil. Let it cool, then refrigerate until cold.

4

Churn the Ice Cream

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. Transfer to a container and freeze until firm.

Cardamom Sugar

5

Prepare the Cardamom Sugar

In a small bowl, mix together the granulated sugar and ground cardamom. Set aside for serving.
