Churros Preparation

Prepare the Dough

In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat. Once boiling, add the flour and stir until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat and let it cool for about 5 minutes.

Add Eggs

Add the eggs one at a time, mixing well after each addition until fully incorporated. The dough should be smooth and slightly sticky.

Heat the Oil

In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 360°F (182°C).

Fry the Churros

Transfer the dough to a piping bag fitted with a large star tip. Pipe 4-6 inch strips of dough into the hot oil, cutting them with scissors. Fry until golden brown on all sides, about 2-3 minutes per side. Remove and drain on paper towels.

Coat with Sugar

In a shallow dish, mix the granulated sugar and ground cinnamon. Roll the fried churros in the sugar mixture to coat.

Prepare the Dulce de Leche

To make dulce de leche, place the can of sweetened condensed milk in a pot of simmering water (make sure it's fully submerged) and simmer for 2-3 hours. Let it cool before opening.

Serve the churros warm, drizzled with dulce de leche and sprinkled with Maldon salt to taste.
