Prepare the Potatoes
Preheat the oven to 400°F (200°C). Wash and halve the fingerling potatoes. Toss them with 1 tablespoon of olive oil, salt, and pepper. Place them on a baking sheet and roast for 25-30 minutes or until golden and tender.

Sauté the Vegetables
In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute. Then, add the seasonal vegetables and sauté for 5-7 minutes until tender. Season with salt and pepper.
Cooking the Salmon

Pan-Seared Salmon
Season the salmon fillets with salt, pepper, and fresh herbs. In the same skillet used for the vegetables, add a little more olive oil if needed and heat over medium-high heat. Add the salmon, skin-side down, and cook for about 4-5 minutes. Flip and cook for an additional 3-4 minutes until cooked through.
Making the Hollandaise

Citrus Hollandaise Sauce
In a heatproof bowl, whisk together egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler method). Slowly whisk in melted butter, one tablespoon at a time, until the sauce is thick and creamy. Stir in orange juice, and season with salt and pepper to taste.
