Prepare the Rhubarb Agrodolce

Chop the rhubarb into small pieces. In a saucepan, combine rhubarb, sugar, and a splash of water. Cook over medium heat until the rhubarb breaks down and the mixture thickens, about 10 minutes. Set aside.

Cook the Quinoa

Rinse the quinoa under cold water. In a pot, combine quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and fluff with a fork.

Brown the Butter

In a skillet, melt the butter over medium heat. Continue to cook until it turns golden brown and has a nutty aroma, about 5-7 minutes. Mix the brown butter with the cooked quinoa and set aside.

Prepare the Drop Peppers

Sauté the drop peppers in olive oil over medium heat until softened, about 4-5 minutes. Season with salt and pepper.

Make the Pear Salsa

Dice the pear and mix it with chopped dill, a pinch of salt, and a squeeze of lemon juice. Set aside.

Cook the Salmon

Preheat the oven to 400°F (200°C). Season the salmon fillets with salt and pepper. Place on a baking sheet and bake for 12-15 minutes or until cooked through. Brush with rhubarb agrodolce during the last 5 minutes of cooking.

Serve

Plate the salmon with a side of brown butter quinoa, sautéed drop peppers, and top with pear salsa. Drizzle extra rhubarb agrodolce if desired.
