Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Pat the pork belly dry with paper towels. Score the skin in a crosshatch pattern, being careful not to cut into the meat.
Season the Pork Belly
Rub the pork belly liberally with salt, black pepper, garlic powder, onion powder, and paprika. Ensure the seasoning gets into the scored skin.
Sear the Pork Belly
In a large oven-safe skillet, heat olive oil over medium-high heat. Place the pork belly skin-side down and sear for about 5-7 minutes until the skin is crispy.
Roast the Pork Belly
Turn the pork belly over, add apple cider vinegar and honey to the skillet, and transfer it to the preheated oven. Roast for approximately 2-2.5 hours, basting occasionally with the pan juices.
Crisp the Skin
Increase the oven temperature to 450°F (230°C) and roast for an additional 20-30 minutes until the skin is bubbly and crisp.
Rest and Serve
Remove the pork belly from the oven and let it rest for 15 minutes before slicing. Serve warm, drizzled with pan juices if desired.
