Method
Gazpacho
Adjust texture and chill
Taste and adjust seasoning with up to 1/2 teaspoon additional salt and 1/2 teaspoon black pepper. If the soup is too thick, add remaining cold water 1 tablespoon at a time to reach a silky pourable consistency (target ~300β400 ml finished volume). Add ice cubes and blend briefly (10 seconds) to chill rapidly, then strain through a fine-mesh sieve into a bowl, pressing solids to extract liquid for the smoothest texture. Cover and refrigerate at least 1 hour or until well chilled.
Finish with olive oil
Stir in the remaining 1 tablespoon olive oil just before serving and adjust acidity with a few drops more sherry vinegar if needed.
Wild Blue Crab & Tiny Vegetable Garnish
Prepare crab
Gently pick through the crab meat to remove any stray shell pieces and lumps. Place crab in a bowl and season with 1/4 teaspoon fine sea salt, 1/4 teaspoon black pepper, lemon juice and lemon zest. Fold in chives and micro basil leaves, taking care not to overwork the meat. Keep chilled until plating.
Prepare tiny vegetables
Combine halved mini heirloom tomatoes, sliced Persian cucumber and thinly sliced radishes in a small bowl. Toss lightly with a pinch of salt (about 1/8 tsp) and set aside. These provide textural contrast and should be kept cold.
Assembly note
All garnish components should be plated cold. Have crab, vegetables and basil oil ready when the gazpacho is removed from the refrigerator.
Basil Oil & Finishing
Make basil oil
Blanch basil leaves in a pot of boiling water for 5 seconds, then immediately transfer to an ice bath to preserve color. Drain and squeeze gently to remove excess water. Place basil in a blender or food processor with 60 ml extra-virgin olive oil, 30 ml neutral oil and 1/4 teaspoon fine salt. Blitz until bright green and emulsified, about 30β45 seconds. Strain through a fine sieve or chinois into a small bowl, pressing to extract oil. Taste and adjust salt if needed. Chill briefly if oil has warmed.
Plate the first course
Ladle chilled yellow tomato gazpacho into chilled shallow bowls (about 150 ml per serving). Using a small spoon, place a loose quenelle or small mound (approx. 40 g) of seasoned wild blue crab in the center of each bowl. Artistically arrange a few tiny vegetable pieces and micro basil leaves around and atop the crab for color and texture.
Finish and serve
Drizzle 1 teaspoon of basil oil around each bowl and a few small dots on the crab. Scatter a few microgreens and optional edible flowers. Finish with a light grind of black pepper and, if desired, a final pinch of flaky sea salt. Serve immediately while chilled.
