Prepare cucumber

Wash the cucumber and slice off about 1/8" from each end. Cut the cucumber into 12 equal rounds (approximately 1/2" thick). Using a small melon baller or paring knife, gently remove the center of each round to create a shallow cup, leaving about 1/4" of cucumber at the bottom so cups hold filling.

Lightly season the inside of each cucumber cup with a small pinch of sea salt. Drizzle the lemon juice evenly across the cups (about 1/2 tsp total) and brush or drizzle the olive oil over the outside of the rounds to keep them glossy.

Arugula pesto

Toast pine nuts

In a small dry skillet over medium heat, toast the pine nuts, tossing frequently, until fragrant and lightly golden, 2–3 minutes. Transfer to a plate to cool so they don’t continue to brown.

Blend pesto

In a small food processor or blender combine the arugula, basil, cooled pine nuts, grated Parmesan, minced garlic, salt, and pepper. Pulse to begin breaking down the leaves, then stream in the olive oil while pulsing until you reach a smooth but slightly textured paste. Taste and adjust seasoning. If the pesto is too thick, add up to 1/2 tsp water or extra olive oil to loosen slightly — pesto should be spoonable but hold its shape in the cucumber cups.

Balsamic gastrique

Make gastrique

In a small nonreactive saucepan combine the sugar and water over medium heat. Stir until sugar dissolves and the mixture just starts to bubble. Add the balsamic vinegar and bring to a gentle simmer. Reduce heat to low and simmer until the mixture coats the back of a spoon and has reduced to about 3–4 tablespoons (8–10 minutes), stirring occasionally. It should be glossy and syrupy but not burnt. Remove from heat.

If using, whisk in the 1/2 tsp of butter until melted for extra shine and to slightly round out acidity. Taste and, if very sharp, simmer another 30–60 seconds. Let cool to room temperature; the gastrique will thicken as it cools.

Assembly & garnish

Fill cucumber cups

Using a small spoon or piping bag, place about 1/2 tsp of arugula pesto into each cucumber cup, smoothing the top so the filling is visible but not overflowing.

Drizzle a very small amount of the cooled balsamic gastrique — about 1/4 tsp — over each filled cucumber cup. Aim for a decorative dot or thin line so the gastrique complements but doesn't overpower the pesto.

Top each amuse bouche with a tiny sprig of microgreens or a single small arugula leaf. Sprinkle a few flakes of sea salt and a light grinding of black pepper. Finish with a whisper of lemon zest (a very small pinch per piece) to brighten flavors.

Arrange the cucumber amuse bouche on a chilled platter and serve immediately. Leftover gastrique can be stored in the refrigerator for up to 2 weeks; pesto is best used within 24–48 hours refrigerated.
