Store the bottle at cellar temperature (55-60°F / 13-15°C) if you have time. If the bottle has been stored warm, chill gently in the refrigerator for 20–30 minutes before serving; avoid serving too cold because it will mute flavors.

Chill / Temperature

Open the bottle 30–60 minutes before serving. If the wine is young and tannic, decant for 30–60 minutes to allow aeration. If unsure, pour a small taste first — if the aromatics are closed, decant; if bright and open, you may serve directly from the bottle.

Decanting

Use large Bordeaux-style glasses. Pour approximately 5–6 oz (150–180 ml) per glass to allow space for aroma. Hold the glass by the stem and swirl gently before smelling and tasting.

Pouring

Provide filtered water alongside to sip between tastes and reset the palate.

Palate Cleansing

Bring cheeses to room temperature 30 minutes before serving to open flavors. Arrange Manchego/Comté and cured meats on a board. Slice the bread into 1/2" slices and place walnuts and dark chocolate in small bowls.

Cheese & Charcuterie Preparation

Start with lighter bites (bread, a small piece of cheese), then move to cured meats, then darker chocolate between sips of the wine. Taste the wine alone first to note aromas and structure, then taste with food to observe how flavors shift.

Tasting Sequence

If you have leftover wine, re-cork and refrigerate upright for 3–5 days. For longer freshness, use a vacuum stopper or inert gas preservation system.
