Rice and Tahdig
Soak rice
Rinse the basmati rice under cold water until water runs clear. Place rice in a bowl, cover with 6 cups of cold water and 1 tsp salt. Soak for 30 minutes to 1 hour, then drain and set aside.
Prepare saffron
Crush saffron threads lightly with your fingers or a mortar and pestle. Bloom saffron by pouring 2 tablespoons hot (not boiling) water over it and let steep for at least 10 minutes; set aside. Reserve 2–3 tablespoons of this saffron water for coloring part of the rice and the rest for taste.
Parboil rice
Bring a large pot of water to a rolling boil (use about 8 cups water), add 1 tsp salt. Add drained rice and parboil until grains are tender but still slightly firm in the center (about 5–6 minutes). Taste a grain: it should be cooked outside but have a faint core. Drain rice in a colander and run briefly under hot water to stop cooking. Toss gently with a few drops of oil to prevent sticking; set aside.
Make yogurt-egg mixture
In a large bowl whisk together yogurt, eggs, 2 tablespoons melted butter, and half of the bloomed saffron (including some liquid) until smooth. Season with a pinch of salt. This mixture will be combined with a portion of the parboiled rice to form the tahdig (crust) and outer layer.
Prepare pot for tahdig
In a 10–12 inch heavy-bottomed nonstick or cast-iron pot, melt 1 tablespoon butter with 3 tablespoons vegetable oil over medium heat. When the fat is hot, pour the yogurt-egg-saffron mixture into the bottom of the pot, spreading evenly to cover. Alternatively, you can mix 1/3 to 1/2 cup of the yogurt mixture with a few scoops of rice to form a colored crust layer and press onto bottom.
Layer rice
Divide the drained rice: mix about 1 to 1 1/2 cups of rice with remaining saffron water to color (set aside). Spoon a layer of plain drained rice to cover the yogurt mixture in the pot (about half the rice). Spread the chicken filling evenly over this rice layer. Top with the saffron-colored rice, then finish with the remaining plain rice to mound. Use the handle of a spoon to create several holes in the rice to allow steam to circulate.
Steam cook (dum)
Wrap the pot lid with a clean kitchen towel or use a lid with a tight seal to trap steam. Place the pot over medium heat for 5–7 minutes to start forming the crust, then reduce heat to low and steam for 35–45 minutes. Cook until rice is fully tender and a golden crust (tahdig) forms on the bottom. Avoid lifting the lid during cooking.
Invert and serve
Turn off heat and let pot rest 5 minutes. To unmold, run a spatula around the rim and invert the pot onto a large serving platter (place platter over pot and flip). Lift pot to reveal tahdig — the golden crust should sit on top. If crust doesn’t release, slide a thin spatula between crust and pot edges carefully, then invert.

Cook chicken filling
While rice soaks, heat 1 tablespoon olive oil in a skillet over medium heat. Add chopped onion and sauté until translucent and beginning to brown, about 6–8 minutes. Add minced garlic and cook 30 seconds until fragrant. Add diced or shredded chicken thighs, 1 tsp turmeric, 1 tsp ground cumin, 1/2 tsp black pepper and 1 tsp salt. Cook, stirring, until chicken is fully cooked and spices are fragrant, about 6–8 minutes. If mixture is dry, add 1–2 tablespoons water to loosen. Remove from heat and let cool slightly.
Garnish and finishing
Prepare barberries
Rinse barberries quickly under cold water and drain. In a small skillet, melt 1 tablespoon butter over low heat. Add barberries and 1 teaspoon sugar and sauté very briefly (1–2 minutes) just until they plump. Watch carefully—barberries cook quickly and can burn. Remove from heat and set aside.
Toast nuts
In a small dry skillet over medium heat, toast slivered almonds or pistachios until fragrant and lightly golden, about 2–3 minutes. Stir constantly to avoid burning. Remove and set aside.
Plate and garnish
Once tahcheen is inverted, sprinkle the sautéed barberries and toasted nuts over the top. Garnish with chopped parsley or fresh herb if using. Serve slices of tahcheen warm—each slice should show layers of rice and a crisp golden tahdig crust with chicken filling inside.
