Mix and portion

In a large bowl, combine ground beef, kosher salt, black pepper, Worcestershire sauce, panko breadcrumbs, and the egg. Gently mix with your hands or a spatula until just combined — avoid overworking to keep patties tender.

Form patties

Divide the mixture into 4 equal portions (about 5 oz each). Form each portion into a patty about 3/4-inch thick and slightly wider than your buns (they will shrink when cooking). Make a shallow dimple in the center of each patty with your thumb to prevent puffing.

Chill briefly (optional)

Place patties on a plate, cover, and refrigerate 15–20 minutes if you prefer firmer patties for easier grilling.

Island Sauce

While patties rest, make the sauce. In a small bowl, whisk together mayonnaise, pineapple juice, sweet chili sauce, lime juice, soy sauce, grated ginger, minced garlic, and hot sauce if using. Taste and adjust: add more lime for brightness, or more sweet chili for sweetness. Refrigerate until ready to assemble.

Prepare pineapple

Pat pineapple rings dry with paper towels. Brush both sides lightly with vegetable oil and season with the salt and black pepper.

Toast buns

Heat a skillet or grill to medium-high. Brush the cut sides of the buns with softened butter and toast, cut-side down, 1–2 minutes until golden. Remove and set aside.

Grill pineapple

Place pineapple rings on the hot grill or skillet and cook 1–2 minutes per side until lightly charred and warmed through. Remove and set aside.

Cook patties

Oil the grill grates or skillet lightly with the vegetable oil. Place patties on the hot surface. Cook 3–4 minutes on the first side without moving, then flip. After flipping, top each patty with a slice of cheddar and cover pan or close grill for 1–2 minutes to melt cheese and bring patties to desired doneness (medium: internal temp ~145–150°F / 63–66°C). Cook times will vary with thickness and heat.

Assemble Burgers

Spread about 1 to 1 1/2 tablespoons of Island Sauce on the bottom half of each toasted bun. Place a lettuce leaf on the sauced bottom bun to create a moisture barrier.

Set the cheese-topped patty on the lettuce, then place a warm grilled pineapple ring on top of the cheese. Add a few thin red onion slices and pickled jalapeños if using.

Spread a little extra Island Sauce on the top bun, cap the burger, press lightly to settle, and serve immediately.
