Build and shake

Add citrus vodka (2 oz), pineapple rum (1 oz), fresh lime juice (0.5 oz), blue curaçao (0.5 oz) and simple syrup (0.5 oz) into a cocktail shaker filled halfway with ice cubes. Secure the lid and shake vigorously for 10–12 seconds until well chilled.

Prepare glass

Fill a highball or Collins glass about three-quarters full with crushed ice (about 1 cup). This will keep the seltzer from going flat too quickly and give the drink a slushy, beachy texture.

Strain and layer

Strain the shaken mixture over the crushed ice in the prepared glass, pouring evenly.

Top with seltzer

Gently top the drink with 6 oz chilled spiked grapefruit or lime seltzer. Pour slowly down the inside of the glass or over the back of a spoon to preserve some separation and create a layered look if desired.

Adjust sweetness and stir

Taste briefly and, if needed, stir gently 2–3 times with a bar spoon to integrate without flattening the carbonation. If you prefer sweeter, add an additional 0.25–0.5 oz simple syrup and stir once.

Garnish & Serve

Thread a pineapple wedge and a lime wheel onto the toothpick or cocktail pick and perch it on the rim of the glass. Optionally, drop a thin lime wheel into the drink for extra aroma.

Serve immediately with a straw or sip directly. Encourage serving while cold to preserve seltzer fizziness.
