Build and shake

Add 1.5 oz Captain Morgan spiced rum (or 1.5 oz silver tequila if you prefer a tequila-forward version) to a cocktail shaker. Add 0.5 oz orgeat, 2 oz pineapple juice, 0.75 oz fresh lime juice (labeled 'fresh sour'), and 0.25 oz simple syrup only if you prefer a touch more sweetness. Fill the shaker with ice (about 1 cup).

Shake vigorously

Secure the shaker lid and shake vigorously for 12–15 seconds, until the outside of the shaker is well chilled and slightly frosted. The vigorous shake both chills the drink and creates a slight froth from the juices and orgeat.

Prepare glass

Fill a rocks glass or double old‑fashioned glass with fresh ice (cracked or cubed). Optionally, if serving 'up', strain into a chilled coupe without ice.

Strain and serve

Strain the cocktail from the shaker into the prepared glass over the fresh ice using a Hawthorne or fine strainer to catch small ice shards and pulp.

Garnish

Garnish with a pineapple wedge on the rim and a lime wheel. Optionally express a lime peel over the drink for extra aroma, or lightly dust the top with a few drops of orgeat if you want an almond accent.

Notes

If substituting tequila for rum, the drink becomes brighter and slightly herbaceous; you can reduce orgeat to 0.4 oz if the almond flavor becomes too forward. Adjust simple syrup to taste. Serve immediately.
