Sauteed Pesto Shrimp Recipe

The pesto shrimp is sauteed with spinach, asparagus. The pesto, which is simply olive oil and basil, is added giving the dish its beautiful green color and adding its flavor to the shrimp. To complete the dish, it is all married with a lemon cooked farro and topped with crushed almonds.

Cook the Farro

In a medium saucepan, combine farro with 3 cups of water and a pinch of salt. Bring to a boil, then reduce to a simmer. Cover and cook for about 30 minutes or until tender. Drain excess water and stir in lemon juice.

Prepare the Pesto

In a small bowl, mix together olive oil and chopped basil to create a simple pesto. Set aside.

Sauté the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped asparagus and sauté for about 3-4 minutes until tender. Add the spinach and cook until wilted. Season with salt and black pepper. Remove vegetables from the skillet and set aside.

Cook the Shrimp

In the same skillet, add the remaining 2 tablespoons of olive oil. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Pour the pesto over the shrimp and mix well.

Combine Everything

Add the sautéed vegetables back to the skillet with the shrimp. Toss everything together to combine and heat through for another minute.

Serve

Serve the shrimp and vegetable mixture over a bed of lemon farro. Top with crushed almonds for added crunch.
