Prepare simple syrup (if not using store-bought)

If you don't have ready simple syrup, combine equal parts granulated sugar and hot water (for this recipe use 2 teaspoons sugar + 2 teaspoons hot water). Stir until sugar dissolves, then cool. Measure 2 tsp for the recipe.

In a blender, add 2 cups frozen strawberries (or mixed berries), 1 oz fresh lime juice, 2 tsp simple syrup (or agave), and 1 oz cold water. The cold water helps the blender rather than diluting flavor too much.

Add 1 cup crushed ice to the blender. If using whole ice cubes, use the additional 1 cup of ice as needed. Secure lid.

Blend on high in 10–15 second bursts, about 30–45 seconds total, until mixture is smooth and slushy. Stop and scrape down sides once; if too thick to blend, add up to 1 oz more cold water. If too thin, add a small handful of ice and pulse to thicken.

If desired, rim the serving glass with a lime wedge then dip in a little granulated sugar. This is optional and adds a sweet contrast.

Pour the blended daiquiri into a chilled coupe or highball glass. Garnish with a lime wheel or wedge and a mint sprig if using.

Serve immediately with a straw. Stir briefly before sipping to incorporate any separation.
