preheat

Preheat your oven to 500°F (260°C). If using a pizza stone, place it on the middle rack before preheating. If using a baking sheet, lightly oil it and set aside.

prepare dough

On a lightly floured surface, stretch or roll the pizza dough into a 12–14 inch round (or desired shape). Dust with flour as needed to prevent sticking. Transfer the stretched dough to a piece of parchment paper or the prepared baking sheet. Brush the outer 1/2-inch rim with 1 tablespoon olive oil to promote browning.

Sauce

In a small bowl, combine 1 cup tomato pizza sauce with 1 tsp dried oregano, 1 tsp garlic powder, and 1 tsp crushed red pepper flakes. Stir to combine. Taste and adjust seasoning (add pinch of salt if desired). Spread the sauce evenly over the dough leaving the oiled rim clear (about 1/2 inch).

Cheese & toppings

Evenly sprinkle 2 1/2 cups of shredded mozzarella over the sauce, leaving a small amount to add after baking for extra melt. Distribute the pepperoni slices over the cheese in a single layer.

Scatter sliced cooked American/Italian sausage evenly across the pizza. If your sausage is raw, brown it first in a skillet over medium heat, breaking it into small pieces, then drain and cool slightly before using.

Arrange the green pepper slices, black olive slices, sliced mushrooms, and thinly sliced red onion evenly across the pizza. Sprinkle the remaining 1/2 cup mozzarella over the toppings so they meld during baking. Season the assembled toppings lightly with 1/4 tsp salt and 1/8 tsp black pepper.

Baking & finishing

Slide the pizza (on parchment) onto the preheated pizza stone or place the baking sheet in the oven. Bake at 500°F (260°C) for 8–12 minutes, or until the crust is golden and cheese is bubbly and starting to brown. Baking time will vary with oven and thickness of dough—watch closely after 7 minutes.

Remove the pizza from the oven. Immediately sprinkle 2 tablespoons grated Parmesan (optional) and scatter fresh basil leaves if using. Drizzle 1 tsp olive oil over the crust and toppings and, if desired, dust with crushed red pepper to taste.

Let the pizza rest for 3–5 minutes to allow the cheese to set, then slice into 8 pieces and serve hot.
