Make quick single-serving dough

In a small bowl combine warm water, sugar and yeast. Stir and let sit 5 minutes until foamy. If no foam, yeast may be inactive — use fresh yeast or slightly warmer water.

Add flour, pinch of salt and 1 tsp olive oil to the yeast mixture. Stir with a fork or small spatula until a shaggy dough forms. The small quantity is sticky; if too sticky to handle, dust with up to 1 tsp more flour.

Turn dough onto a lightly floured surface and knead gently for about 1 minute until smooth and elastic. Form into a ball and let rest, covered with a clean towel, for 10–15 minutes to relax (quick rise).

Preheat oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat. If not, use a rimmed baking sheet inverted and preheated.

On a lightly floured surface press or roll the dough into a single pizza slice–sized disk about 6–7 inches long and roughly triangular (or a 6–7" circle). Aim for about 1/8–1/4" thickness for a thin slice.

Transfer the shaped dough to a piece of parchment paper or a well‑floured peel. Brush the surface lightly with 1/2 tsp olive oil (helps crisping and browning).

Spread 2 tbsp tomato sauce evenly over the dough, leaving a 1/4" edge for the crust. Sprinkle 1/4 cup shredded mozzarella evenly, then 1 tsp grated Parmesan. Tear or place fresh basil leaf on top if using.

Slide the pizza (with parchment) onto the preheated stone or baking sheet. Bake 6–9 minutes until crust is golden and cheese is bubbly and lightly browned. Watch closely — single slice bakes quickly at high heat.

Remove pizza from oven. Let rest 1–2 minutes, then brush the crust edge with a touch more olive oil and slice if needed. Serve hot.

Simple Lemon Iced Tea (One Glass)

Place the tea bag in a heatproof cup. Pour 1/4 cup hot water over the bag and steep 3 minutes for a strong base (longer for stronger flavor).

Remove and discard the tea bag. Stir in 1 tsp simple syrup (or honey) while the tea is hot so it dissolves easily.

Add 1 tsp fresh lemon juice, then pour in 1/2 cup cold water and stir to combine.

Fill a serving glass with 3 ice cubes, pour the cooled tea over the ice, garnish with a lemon slice, and serve immediately alongside the pizza slice.
