Prepare the Steak

Take the Wagyu NY Strip steaks out of the refrigerator and let them come to room temperature for about 30 minutes. Pat them dry with paper towels.

Season the Steak

Generously season both sides of the steaks with kosher salt and black pepper.

Heat the Pan

In a large cast-iron skillet, heat the olive oil over medium-high heat until it shimmers.

Sear the Steak

Add the steaks to the hot skillet and sear for about 4-5 minutes on one side without moving them.

Flip and Add Flavor

Flip the steaks over and add garlic cloves, rosemary, and butter to the pan. Allow the steaks to cook for another 4-5 minutes, basting them with the melted butter and cooking juices.

Check Doneness

Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130°F (54°C).

Rest the Steak

Remove the steaks from the skillet and let them rest on a cutting board for 5-10 minutes before slicing.

Serve

Slice against the grain and serve immediately, drizzled with pan juices and garnished with fresh rosemary.
