Focaccia Dough
Method
Preparation and Baking
Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
Make the Dough
In a large mixing bowl, combine flour and salt. Add the activated yeast mixture and 2 tablespoons of olive oil. Mix until a dough forms.
Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
First Rise
Place the dough in an oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Prepare the Pan
Grease a baking sheet with olive oil. After the dough has risen, punch it down and spread it out onto the prepared baking sheet.
Second Rise
Cover the dough again and let it rise for another 20-30 minutes.
Preheat Oven
Preheat your oven to 425°F (220°C).
Add Toppings
Dimple the dough with your fingers, drizzle with the remaining olive oil, and sprinkle with fresh rosemary leaves and coarse sea salt.
Bake
Bake in the preheated oven for 20-25 minutes or until golden brown.
