Remove the dry-aged New York strip steak from the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

Season the Steak

Generously season both sides of the steak with kosher salt and freshly ground black pepper.

In a large cast-iron skillet, heat the olive oil over medium-high heat until it begins to shimmer.

Add the steak to the hot skillet and sear for about 4-5 minutes on one side, until a crust forms.

Turn the steak over and add the rosemary sprigs, garlic cloves, and butter to the pan. Continue to cook for another 4-5 minutes for medium-rare, basting the steak with the melted butter and pan juices.
