Preparation
Toast the Pistachios
In a dry skillet over medium heat, toast the shelled pistachios for about 3-4 minutes until fragrant. Remove from heat and let cool.
Blend the Ingredients
In a blender, combine the cooled pistachios, whole milk, heavy cream, sugar, vanilla extract, and a pinch of salt. Blend until smooth and creamy.
Chill the Mixture
Transfer the mixture to a bowl and refrigerate for at least 30 minutes to chill thoroughly.
Churn the Gelato
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze the Gelato
Transfer the gelato to a lidded container and freeze for about 2-4 hours until firm.
Serve with Strawberries
Scoop the gelato into bowls and top with wild Italian strawberries before serving.
