Prepare the Steak

Remove the ribeye steaks from the refrigerator and let them come to room temperature for at least 30 minutes. Pat them dry with paper towels.

Generously season both sides of the steaks with salt and black pepper.

In a large skillet or cast-iron pan, heat the olive oil over medium-high heat until shimmering. Add the steaks and sear for about 4-5 minutes on each side, or until a nice crust forms.

During the last minute of cooking, add crushed garlic cloves and rosemary sprigs to the pan. Baste the steaks with the flavored oil using a spoon.

Use a meat thermometer to check for the desired doneness: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
