In a mixing bowl, combine the sea salt, brown sugar, grapefruit zest, orange zest, lemon zest, and black peppercorns. Mix well.

Place the salmon fillet on a large piece of plastic wrap. Spread half of the salt mixture evenly over the flesh of the salmon, ensuring it covers the entire surface.

Drizzle the grapefruit juice, orange juice, and lemon juice over the salmon, allowing it to soak into the flesh.
