Soak Chickpeas

Rinse the dried chickpeas and soak them in water overnight (or for at least 8 hours) until they are soft.

Prepare the Mixture

Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarsely blended but not pureed.

Add Flour

Transfer the mixture to a bowl and stir in the flour until well combined. The mixture should hold together but not be too sticky.

Form the Falafel Balls

Using your hands, form the mixture into small balls or patties, about 1-2 inches in diameter.

Heat Oil

In a deep pan or skillet, heat vegetable oil over medium heat until hot.

Fry the Falafel

Carefully add the falafel balls to the hot oil in batches, frying until golden brown on all sides, about 3-4 minutes per batch. Use a slotted spoon to remove and drain on paper towels.
