Preparation Steps
Prepare the Ponzu Sauce
In a bowl, combine the black garlic (mashed), soy sauce, mirin, rice vinegar, and sesame oil. Mix well until fully combined and set aside.
Sear the Wagyu
Heat a skillet over high heat. Season the Australian Wagyu beef with salt and black pepper. Sear the meat for about 1-2 minutes on each side, ensuring a nice crust forms while keeping the center rare. Remove from heat and let it rest for 5 minutes.
Slice the Wagyu
After resting, slice the Wagyu beef thinly against the grain.
Plate the Dish
On a serving plate, arrange the sliced Wagyu beef. Drizzle the black garlic ponzu sauce over the top. Add crispy potatoes on the side and garnish with chopped chives.
