Maple Rum Sauce
Prepare the Sauce
In a medium saucepan over medium heat, combine the maple syrup, dark rum, pineapple juice, butter, vanilla extract, and a pinch of salt. Stir well and bring to a simmer. Let it cook for about 10 minutes until slightly thickened. Remove from heat and set aside.
Cinnamon Oat Crumble
Prepare the Crumble
In a bowl, mix together the rolled oats, flour, brown sugar, ground cinnamon, nutmeg, and a pinch of salt. Melt the stick of butter and pour it over the oat mixture. Stir until crumbly. Spread the mixture onto a baking sheet and bake in a preheated oven at 350°F (175°C) for about 15-20 minutes or until golden brown.
Pineapple Skillet
Cook the Pineapple
In a large skillet over medium heat, add the sliced fresh pineapple and cook for about 5-7 minutes until caramelized. Pour the maple rum sauce over the pineapple and gently toss to coat.
Serve
Top the caramelized pineapple with the cinnamon oat crumble and serve warm. Enjoy!
