Vanilla Custard

Method

Preparation Steps

1

Cook the Milk and Cream

In a medium saucepan, combine the milk and heavy cream. Place over medium heat and heat until just below boiling, stirring occasionally.

2

Mix the Dry Ingredients

In a separate bowl, whisk together the sugar, cornstarch, and salt.

3

Prepare the Egg Yolks

In another bowl, whisk the egg yolks until smooth. Slowly add the warm milk and cream mixture to the egg yolks, whisking constantly to temper them.

4

Combine and Cook

Pour the egg yolk mixture back into the saucepan with the remaining milk and cream mixture. Add the sugar and cornstarch mixture. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5-7 minutes.

5

Add Vanilla

Remove from heat and stir in the vanilla extract.

6

Chill

Transfer the custard to a bowl and cover with plastic wrap, pressing it directly onto the surface. Chill in the refrigerator for at least 2 hours before serving.
