Method

Panna Cotta

1

Prepare the Gelatin

In a small bowl, sprinkle gelatin over 6 tablespoons of water and let it sit for 5-10 minutes until it blooms.

2

Heat the Cream Mixture

In a saucepan, combine heavy cream, whole milk, sugar, and vanilla extract. Heat over medium heat until sugar dissolves and the mixture is hot, but not boiling.

3

Combine Gelatin and Cream

Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved. Pour the mixture into individual serving cups and refrigerate for at least 4 hours or until set.

Macerated Strawberries

4

Macerate the Strawberries

In a bowl, combine sliced strawberries, dark balsamic vinegar, and sugar. Toss well and let sit for at least 30 minutes to allow the strawberries to soften and release their juices.

Pickled Orange Wedges

5

Pickle the Oranges

In a small saucepan, combine white vinegar, sugar, and salt. Bring to a boil, then pour over the orange wedges in a bowl. Let sit for about 30 minutes.

Whipped Cream

6

Whip the Cream

In a mixing bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form. Refrigerate until ready to serve.

Assembly

7

Serve the Panna Cotta

Once the panna cotta has set, top each with macerated strawberries, pickled orange wedges, a dollop of whipped cream, fresh mint leaves, and a sprinkle of orange zest.
