Method
Prepare Sushi Rice
Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Cook rice according to package instructions, typically in a rice cooker or on the stove with 2 cups of water.
Season the Rice
Once cooked, transfer rice to a large bowl. Mix rice vinegar into the rice while it's still warm. Allow it to cool to room temperature.
Make Chipotle Aioli
Blend Ingredients
In a bowl, whisk together mayonnaise, chipotle peppers, lime juice, and minced garlic until smooth and well combined. Set aside.
Prepare Wonton Crunch
Fry Wontons
Heat vegetable oil in a deep pan over medium heat. Cut wonton wrappers into triangles and fry in batches until golden brown and crispy. Drain on paper towels.
Assemble Spicy Tuna Roll
Prep the Fillings
Slice the Bigeye Ahi Tuna and cucumber into thin strips.
Roll the Sushi
Place a sheet of nori on a bamboo sushi mat. Spread a layer of sushi rice over the nori, leaving a 1-inch border at the top. Add a line of tuna and cucumber in the center. Drizzle some chipotle aioli over the filling.
Roll and Cut
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water. Slice into 6-8 pieces and serve with extra chipotle aioli and wonton crunch on the side.
