Prepare the Ingredients
Slice the pork belly into bite-sized pieces. Peel and devein the shrimp. Chop the tomatoes, onion, radish, and eggplant into small pieces. Rinse the ong choy thoroughly.
Cooking
Cook the Pork
In a large pot, bring the water to a boil. Add the pork belly and cook for about 15-20 minutes until tender.
Add Vegetables
Stir in the tomatoes, onion, radish, and eggplant. Cook for another 10 minutes until the vegetables soften.
Season the Broth
Add the tamarind paste, fish sauce, green chili peppers, salt, and pepper. Adjust seasoning to taste.
Add Shrimp and Ong Choy
Finally, add the shrimp and ong choy to the pot. Cook for an additional 5 minutes until the shrimp are cooked through and the greens are wilted.
Serving
Serve Hot
Ladle the sinigang into bowls and serve hot with steamed rice on the side.
