Method
Tataki Preparation
Prepare the Ahi Tuna
Mix the soy sauce, sesame oil, black pepper, cayenne pepper, garlic powder, and ginger powder in a bowl. Coat the Ahi tuna in this mixture and let it marinate for 15 minutes.
Sear the Tuna
Heat a skillet over high heat. Sear the marinated Ahi tuna for about 30 seconds on each side, just enough to get a crust. Remove from heat and let it rest for a few minutes.
Slice the Tuna
Using a sharp knife, slice the Ahi tuna into thin pieces and arrange them on a serving plate. Sprinkle with sesame seeds and chopped green onions.
Soy Mustard Preparation
Mix the Soy Mustard
In a small bowl, whisk together the Dijon mustard, soy sauce, and honey until smooth.
Beurre Blanc Preparation
Make the Beurre Blanc
In a saucepan, combine the dry white wine and finely chopped shallots. Simmer until reduced by half. Lower the heat and whisk in the unsalted butter, piece by piece, until the sauce is emulsified. Stir in the heavy cream, and season with salt and white pepper to taste.
