Prepare the Lobster

Boil the lobster in salted water for about 8-10 minutes until cooked. Remove from water, let cool, then cut into pieces.

Prep the Ingredients

Dice the onion, bell pepper, and tomatoes. Mince the garlic. Slice the Portuguese sausage and chorizo.

Cooking

Sauté the Meats

In a large paella pan or skillet, heat olive oil over medium heat. Add the Portuguese sausage and chorizo, cooking until browned. Remove and set aside.

Cook the Vegetables

In the same pan, add the onion, bell pepper, and garlic. Sauté until soft, about 5 minutes.

Combine Ingredients

Stir in the tomatoes, saffron, paprika, and the paella rice. Mix well.

Add Liquids

Pour in the white wine and chicken stock, bring to a simmer.

Add Seafood

Gently add the shrimp, clams, and cooked lobster pieces. Return the sausage and chorizo to the pan. Season with salt and pepper.

Cook the Paella

Reduce heat to low, cover, and let cook for about 20-25 minutes, or until the rice is tender and has absorbed the liquid.

Finish with Peas

Stir in the green peas during the last 5 minutes of cooking.

Let the paella rest for a few minutes. Serve warm, garnished with fresh herbs if desired.
