Ahi Preparation

Prepare the Ahi

Coat the Ahi fillets with a mixture of crushed black peppercorns and sea salt. Press the mixture firmly onto the fillets to ensure it adheres.

Sear the Ahi

Heat olive oil in a pan over medium-high heat. Once hot, add the Ahi fillets and sear for about 2-3 minutes on each side for medium-rare, or until desired doneness.

Sweet Potato Puree

Cook the Sweet Potatoes

Peel and chop sweet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot.

Make the Puree

Add butter and coconut milk to the sweet potatoes and mash until smooth. Season with salt to taste.

Spicy Inamona

Prepare Inamona

In a bowl, combine roasted kukui nuts, sea salt, chili flakes, and chopped green onions. Mix well.
