Prepare the Ingredients

Start by preparing all your ingredients. Dice the eggplant, chop the long beans, and halve the Kahuku tomatoes. Set aside.

Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.

Cook the Eggplant

Add the diced eggplant to the pot and cook for about 5 minutes, stirring occasionally, until it starts to soften.

Add Rice and Curry Paste

Stir in the Arborio rice and red curry paste, cooking for an additional 2-3 minutes until the rice is well coated and fragrant.

Add Broth and Coconut Milk

Gradually pour in the vegetable broth and coconut milk, stirring gently. Bring to a simmer.

Stir in Long Beans and Tomatoes

Once simmering, add the chopped long beans and Kahuku tomatoes. Continue to cook, stirring frequently, for about 18-20 minutes until the rice is creamy and al dente.

Finish with Salmon and Seasoning

In the last 5 minutes of cooking, gently nestle the Ora King salmon fillets into the risotto. Cover and cook until the salmon is cooked through. Season with lime juice, salt, and pepper.

Remove from heat and stir in fresh basil leaves. Serve hot, garnished with additional basil if desired.
