Preparation
Prepare the Ribs
Preheat your oven to 300°F (150°C). Rinse the baby back ribs under cold water and pat them dry with paper towels. Remove the membrane from the back of the ribs if it's still attached.
Season the Ribs
In a small bowl, mix together the salt, black pepper, garlic powder, and onion powder. Rub this spice mix all over the ribs.
Make the Marinade
In a separate bowl, whisk together soy sauce, honey, rice vinegar, and grated ginger.
Marinate
Place the ribs in a large zip-top bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, and let it marinate in the refrigerator for at least 2 hours, or overnight for best results.
Cooking
Bake the Ribs
Remove the ribs from the marinade and place them on a baking sheet lined with aluminum foil. Bake in the preheated oven for about 2.5 to 3 hours, or until the ribs are tender.
Serve
Once cooked, let the ribs rest for a few minutes. Slice them between the bones, and serve topped with chopped chives and toasted sesame seeds.
