Prepare Pickled Red Onions

In a bowl, combine the apple cider vinegar, sugar, salt, and water. Stir until the sugar and salt dissolve. Add the thinly sliced red onion and let it marinate for at least 30 minutes.

Asian Slaw

Make the Asian Slaw

In a large bowl, mix together the shredded cabbage, grated carrot, and chopped green onions. In a separate bowl, whisk together the sesame oil, rice vinegar, soy sauce, and salt. Pour the dressing over the slaw and toss to combine.

Fried Garlic

Prepare Fried Garlic

In a small saucepan, heat the oil over medium heat. Add the thinly sliced garlic and fry until golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Shrimp

Cook the Shrimp

In a large skillet, heat olive oil over medium-high heat. Add the minced garlic and sauté for 1 minute. Add the shrimp, lemongrass, sweet chili sauce, salt, and black pepper. Cook until the shrimp are pink and opaque, about 3-4 minutes.

Serve

Assemble the Dish

Serve the shrimp over a bed of Asian slaw, top with pickled red onions, and sprinkle fried garlic on top. Enjoy!
