Shrimp Preparation

Marinate the Shrimp

In a bowl, combine the minced lemongrass, sweet chili sauce, minced garlic, lime juice, fish sauce, and black pepper. Add the Kauai shrimp to the bowl and marinate for at least 30 minutes.

Cook the Shrimp

Heat a skillet over medium-high heat. Add the marinated shrimp and cook for about 3-4 minutes on each side, or until fully cooked and pink. Remove from heat.

Prepare the Pickles

In a saucepan, combine the white vinegar, sugar, and salt. Heat over medium until the sugar and salt dissolve. Pour the mixture over the thinly sliced red onions in a jar. Let it sit for at least 30 minutes to pickle.

Assembly

Combine and Serve

On a serving plate, place a bed of arugula. Top with the cooked shrimp and pickled red onions. Sprinkle with fried garlic for garnish. Serve immediately.
