Prepare Sushi Rice

Cooking the Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit for 10 minutes.

Seasoning the Rice

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Fold this mixture into the cooked rice and let it cool.

Make Poke

Combine Ingredients

In a bowl, combine the diced Ahi tuna, soy sauce, sesame oil, chopped green onions, lime juice, and sea salt. Gently toss to coat.

Prepare Inamona

Mix Inamona

In a separate bowl, mix the chopped macadamia nuts, sesame seeds, and sea salt to create the Inamona.

Serve

Plating

To serve, place a scoop of the seasoned sushi rice on a plate, top with the Ahi poke mixture, add sliced avocado on the side, and sprinkle with Inamona.
