Method

Lamb Preparation

1

Marinate the Lamb

In a bowl, combine olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub the mixture over the half rack of lamb and marinate for at least 1 hour, or overnight in the fridge for more flavor.

2

Grill the Lamb

Preheat your grill to medium-high heat. Grill the marinated lamb for about 15-20 minutes, turning occasionally, until it reaches your desired doneness. Let it rest for 5 minutes before slicing.

Curried Onion Mashed Potatoes Preparation

3

Cook the Potatoes

In a large pot, boil potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

4

Sauté the Onions

In a skillet, melt butter over medium heat. Add chopped onions and sauté until soft and golden, about 5-7 minutes. Stir in curry powder and cook for an additional 2 minutes.

5

Mash the Potatoes

Add the sautéed onions and heavy cream to the drained potatoes. Mash until smooth and creamy. Season with salt and black pepper to taste.

Roast Tomatoes Preparation

6

Prepare the Tomatoes

Preheat oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, and black pepper. Spread them on a baking sheet.

7

Roast the Tomatoes

Roast in the oven for 15-20 minutes until they are blistered and juicy.
