Prepare the Falafel

Soak Chickpeas

Soak the chickpeas in water overnight. Drain and rinse before using.

Make Falafel Mixture

In a food processor, combine soaked chickpeas, parsley, onion, garlic, cumin, coriander, baking powder, salt, and pepper. Blend until a coarse mixture forms.

Form Falafel Balls

Shape the mixture into small balls or patties.

Fry the Falafel

Heat oil in a deep pan over medium heat. Fry the falafel balls until golden brown, about 4-5 minutes. Drain on paper towels.

Assemble the Wrap

Prepare Ingredients

Slice the tomato and prepare the local greens and pickled onions.

Build the Wrap

On each pita bread, spread a layer of Muhammara, add local greens, sliced tomato, pickled onions, and top with 3-4 falafel balls.

Wrap and Serve

Fold the pita bread around the filling and serve immediately.
