Making the Dough

Prepare the Yeast

In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until frothy.

Mix Dry Ingredients

In a large mixing bowl, combine flour, sugar, and salt.

Combine Wet Ingredients

In another bowl, whisk together the milk, eggs, and melted butter. Add the yeast mixture.

Form the Dough

Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms. Knead on a floured surface for about 10 minutes until smooth.

Let the Dough Rise

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shaping and Baking

Shape the Pastries

After the dough has risen, divide it into portions. Roll each portion out and shape into croissants, Danish, or bagels as desired.

Fill and Top

For croissants and Danish, add cream cheese or fruit filling. For bagels, sprinkle with sesame seeds.

Second Rise

Place the shaped pastries on a baking sheet lined with parchment paper. Let them rise for another 30 minutes.

Bake

Preheat the oven to 375°F (190°C) and bake the pastries for 20-25 minutes or until golden brown.

Serve

Let cool slightly before serving with jams, jellies, or fresh fruit.
