Method
Beef Tenderloin Preparation
Season the Beef
Preheat your oven to 425°F (220°C). Season the beef tenderloin generously with salt and black pepper on all sides.
Sear the Beef
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the beef tenderloin and sear it for about 2-3 minutes on each side until browned.
Roast the Beef
Transfer the skillet to the preheated oven and roast the beef for about 20-25 minutes, or until it reaches your desired level of doneness. Use a meat thermometer for accuracy (130°F for medium-rare).
Rest the Beef
Remove the beef from the oven and let it rest for at least 10 minutes before slicing.

Prepare Tentsuyu
In a small saucepan, combine dashi stock, soy sauce, and mirin. Bring to a gentle simmer and let it cook for about 5 minutes. Set aside.
Assembly
Serve
Slice the rested beef tenderloin and arrange it on a plate. Top with sautéed mushrooms and drizzle the dashi tentsuyu over the dish. Serve immediately.
