Prep the Vegetables

Wash and peel the marble potatoes. Cut them into bite-sized pieces. Break the mochiko cauliflower into florets.

Heat the Oil

In a large skillet, heat the vegetable oil over medium heat.

Cook the Spices

Add cumin seeds to the hot oil and sauté for about 30 seconds until fragrant. Stir in the curry powder, turmeric, and garam masala, cooking for an additional minute.

Add Vegetables

Add the marble potatoes and cauliflower florets to the skillet. Stir well to coat with spices.

Simmer

Pour in the water, season with salt and black pepper, and bring to a gentle simmer. Cover and cook for about 15-20 minutes, or until the potatoes and cauliflower are tender.

Finishing Touches

Once cooked, remove from heat and garnish with fresh cilantro. Serve hot with rice or naan.
