Blue Cheese Dressing

Method

Blue Cheese Dressing

1

Combine base

In a medium mixing bowl, whisk together 1/2 cup mayonnaise, 1/4 cup sour cream and 1/4 cup Greek yogurt until smooth and homogenous.

2

Add acid and seasonings

Whisk in 1 teaspoon lemon juice, 1 teaspoon white wine vinegar, 1/2 teaspoon minced garlic and 1/4 teaspoon Worcestershire sauce until incorporated.

3

Fold in blue cheese

Gently fold in 3/4 cup crumbled blue cheese, reserving about 2 teaspoons for garnish. For a chunkier texture leave larger crumbles; for a creamier texture mash about half the blue cheese with the back of a spoon before folding.

4

Thin to desired consistency

Add 2 tablespoons buttermilk, one tablespoon at a time if needed, whisking until the dressing reaches a thick but pourable consistency suitable for a side-served dressing.

5

Season and finish

Stir in 1 tablespoon thinly sliced chives, 1/4 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper. Taste and adjust: add up to another 1/4 teaspoon salt or up to 1 tablespoon buttermilk for looser consistency.

6

Chill

Cover the bowl and refrigerate for at least 30 minutes to let flavors meld. The dressing will thicken slightly as it chills. Stir before serving.

Garnish & Serving

7

Transfer the dressing to a small serving ramekin or bowl. Sprinkle the reserved 2 teaspoons of blue cheese crumbles and a scant teaspoon of chopped parsley or extra chives over the top.

8

Serve chilled alongside celery sticks, carrot sticks, steak fries, buffalo wings, a salad, or as a side condiment for burgers or sandwiches. Keep refrigerated and consume within 4–5 days.
