Prepare base & texture

    Blend creamy base

    Place the canned coconut milk (shake the can first), silken tofu, and heavy cream (if using) into a blender. Blend on high for 30–45 seconds until completely smooth and homogenous. This creates the snowy, creamy body evocative of sasanigori.

    Taste the blended base for texture — it should be silky and slightly thickened from the tofu. If too thick, add 1–2 tablespoons water or a splash of chilled sake and re-blend briefly.

Assemble cocktail

    Combine alcohol and sweeteners

    To the blender containing the creamy base, add the chilled junmai or nigori sake, coconut rum, coconut liqueur (if using), simple syrup, and vanilla. Add the fresh lime juice. Pulse 6–8 times or blend on medium for 10–15 seconds until evenly mixed — avoid over-blending to preserve a slightly frothy, snowy texture.

    Taste and adjust sweetness or acidity: add up to 1 teaspoon more simple syrup for sweetness, or another 1/2 teaspoon lime juice to brighten the profile. Remember the sake contributes subtle sweetness; keep the drink semi-sweet.

Chill & serve

    Prepare glasses

    Fill two short chilled rocks glasses evenly with ice cubes (about 1/2 cup ice per glass). If desired, rim the glasses by moistening the rim with a little lime juice and dipping into toasted desiccated coconut.

    Pour the blended Shirakawago Sasanigori evenly over the ice into the two glasses (about 200–220 ml per serving depending on ice). The drink should be opaque, snowy white and slightly frothy on top.

    Garnish each glass with a sprinkle of grated or desiccated coconut and a few shaved coconut flakes on top to evoke snow. Serve immediately.
