Prepare the Puff Pastry

Preheat the oven to 400°F (200°C). Roll out the puff pastry on a floured surface and transfer it to a tart pan. Trim the edges and prick the base with a fork to prevent bubbling.

Prepare the Tomatoes

Slice the fresh tomatoes and place them in a bowl. Drizzle with olive oil, and season with salt and black pepper. Toss to coat evenly.

Assemble the Tart

Spread the goat cheese evenly over the puff pastry base. Arrange the seasoned tomato slices on top of the goat cheese, overlapping them slightly.

Bake the Tart

Bake the tart in the preheated oven for about 25-30 minutes or until the pastry is golden brown and the tomatoes are slightly caramelized.

Prepare the Greens

While the tart is baking, toss the bitter greens with aged balsamic vinegar and a drizzle of olive oil.
