In a large pot, combine the water, lemon quarters, bay leaves, Old Bay seasoning, and salt. Bring to a boil over medium-high heat.

Cook the Shrimp

Once the water is boiling, add the shrimp and reduce the heat to medium. Cook for about 2-3 minutes, or until the shrimp are pink and opaque.

Drain and Chill

Remove the pot from heat and drain the shrimp. Transfer shrimp to a bowl of ice water to stop the cooking process. Once chilled, drain again and pat dry.
