    Prepare the Puff Pastry

    Preheat the oven to 400°F (200°C). Roll out the puff pastry sheets on a floured surface and cut them into rectangles. Place the rectangles on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.

    Make the Goat Cheese Mousse

    In a mixing bowl, combine the goat cheese, heavy cream, powdered sugar, and vanilla extract. Use an electric mixer to whip the mixture until smooth and creamy.

    Assemble the Napoleon

    Once the puff pastry is cooled, layer them with the goat cheese mousse and fresh raspberries. Start with a puff pastry layer, add a layer of mousse, then top with raspberries. Repeat the layers, finishing with a puff pastry on top.

    Drizzle balsamic glaze over the assembled Napoleon and garnish with mint leaves. Cut into individual servings and enjoy!
