Make the Pancake Batter

In a large bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, mix the milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are okay.

Cook the Pancakes

Heat a non-stick skillet over medium heat and lightly grease it. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown. Repeat with remaining batter.

Prepare Blueberry Compote

In a small saucepan over medium heat, combine blueberries with a splash of water and a tablespoon of sugar. Cook until the blueberries soften and release their juices, about 5-7 minutes. Remove from heat and set aside.

Whip the Fromage Blanc

In a mixing bowl, whip the heavy cream until soft peaks form. Gently fold in the fromage blanc until well combined. Sweeten to taste if desired.

Serve

Stack the pancakes on plates, top with blueberry compote, a dollop of whipped fromage blanc, and drizzle with maple syrup.
