Prepare the Ingredients

Clean the wild mushrooms and chop them into small pieces. Dice the tomato and crumble the goat cheese.

Cook the Mushrooms

In a skillet, melt the butter over medium heat. Add the chopped wild mushrooms and sauté for about 5 minutes until they are tender and browned. Season with salt and black pepper.

Make the Omelette

In a bowl, whisk the eggs with a pinch of salt and black pepper. Pour the egg mixture over the sautéed mushrooms in the skillet. Cook for 2-3 minutes, gently lifting the edges with a spatula to allow uncooked egg to flow underneath.

Add Fillings

When the eggs are almost set, sprinkle the diced tomato and crumbled goat cheese over one half of the omelette. Fold the omelette in half and cook for another minute.

Serve

Slide the omelette onto a plate and serve immediately, optionally with a petite salade on the side.
