    Prepare the Potatoes

    Peel and cut the potatoes into small cubes. Heat the duck fat in a large pan over medium heat. Add the potatoes and cook until golden brown and crispy, about 15-20 minutes. Season with salt and pepper to taste.

    Cook the Mussels

    In a separate large pot, melt the tarragon herb butter over medium heat. Add the chopped shallots and sauté until translucent. Add the white wine and bring to a simmer. Add the mussels, cover the pot, and cook for about 5-7 minutes or until the mussels have opened.

    Prepare the Baguette

    While the mussels are cooking, slice the baguette and grill it until golden brown on both sides.

    Once the mussels are cooked, serve them in bowls with the duck fat potatoes on the side, accompanied by grilled baguette slices for dipping.
